Aujourd'hui, direction la Somme ! Nous voilà entre Rancourt et Bouchavesnes-Bergen, devant la Chapelle-Mémorial de la Première Guerre mondiale. C’est original : on ne se contente pas d’un monument aux morts, d’une plaque commémorative ou d’un musée, mais on entretient une chapelle, donc un lieu de culte religieux. Alors pourquoi ? À l’intérieur, une exposition raconte justement le fait religieux pendant la grande guerre. Car les tranchées ont finalement concentré les soldats métropolitains et tout un tas de gens venus des quatre coins de l’empire colonial, avec chacun leurs croyances et leurs traditions. Confrontés les uns aux autres, mais surtout à la souffrance et à la mort, ils ont connu des questionnements inattendus et des besoins spirituels profonds…

"FERRANDI, A L'ECOLE DE L'EXCELLENCE" / Au cœur de Paris, la prestigieuse école de cuisine Ferrandi attire chaque année plus de 2000 élèves. Considérée comme le « Harvard de la gastronomie » cette institution centenaire cultive ses valeurs : rigueur, discipline, créativité. Nous avons suivi le parcours de quatre d’entre eux.

A seulement, 18 ans, Hugo rêve déjà de tutoyer les plus grands et d’ouvrir son propre restaurant étoilé. A l’école Ferrandi, il a découvert très jeune l’exigence et la dureté du monde de la gastronomie : « Quand on fait beaucoup d’heures dans la semaine, qu’on transpire beaucoup on se dit qu’est-ce qu’on fait là, on serait peut-être mieux avec ses amis à boire des verres ». Mais ce jeune ambitieux a un rêve qui pour lui justifie tous les sacrifices : devenir un des plus grands. Nous l’accompagnerons dans l’une des cuisines les plus prestigieuse du monde, celle du palais de l’Elysée, où il a réussi à décrocher un stage. Le jeune homme y apprendra des valeurs : patience, respect, esprit d’équipe… la cuisine sera aussi pour lui une école de vie.

Daïdaï est originaire de Hong-Kong. Elle vient pour la première fois en France pour étudier la pâtisserie à l’école Ferrandi : «Avoir une pâtisserie à Paris c’est mon rêve de petite fille et je suis venue pour le réaliser ». Avec son amie Pin Yi, elle aussi chinoise, Daïdaï va devoir redoubler d’efforts pour obtenir son diplôme. Au lieu de deux ans, comme les étudiants français, elles n’auront que cinq mois pour obtenir l’équivalent d’un CAP. En plus de leur formation en pâtisserie elles devront se familiariser avec les subtilités de la culture et de la langue française car à Ferrandi, tous les examens ont lieu en français, y compris pour les étrangers.

A 32 ans Imen, elle, change de vie. Cette ancienne assistante de gestion a décidé de troquer le tailleur contre une toque et une blouse. Pour elle, qui avait un emploi stable et une carrière toute tracée, cette reconversion est risquée. Dans cette nouvelle vie, elle peut compter sur le soutien de ses trois meilleures amies, ce sont elles qui l’ont convaincue de sauter le pas : « Au début quand elles mangeaient mes gâteaux, c’est elles qui me disaient pourquoi tu n’en fais pas ton métier ? Pourquoi tu ne fais pas pâtissière ? Et c’est de là que l’idée a germé ». Originaire de Corbeil-Essone, dans la grande banlieue de Paris, Imen souhaite y ouvrir sa propre pâtisserie. Pas seulement par ambition personnelle, mais aussi pour partager sa passion avec ses amies et les gens de son quartier.

Valentin, lui, n’a plus que trois semaines avant de passer le diplôme de l’école et se lancer dans la vie active. Avec Guillaume et Dimitri, deux autres élèves, il doit concevoir un restaurant éphémère : cuisine, décoration, service en salle… aucun détail ne doit être négligé pour décrocher le précieux diplôme. Nous les accompagnerons dans le Languedoc où ils iront choisir les produits et les vins qui figureront sur leur carte. Nous vivrons avec eux les derniers préparatifs. Sauront-ils convaincre un jury réputé pour son exigence et son intransigeance ? « Ce soir, il y a un peu d’appréhension. Il faut qu’il y ait une qualité constante. Ca répercute forcément la pression sur nous, mais c’est de la bonne pression ». Pour mériter ses premiers galons de chef cuisinier, Valentin n’aura pas le droit à l’erreur.
